Saw It Pinned It Did It: Pumpkin Spice Puppy Chow

I love that they started this link up...it is really forcing me to put my Pinterest ideas and 'want to dos' into action!

I saw this recipe floating around Pinterest when all things pumpkin started taking over 
i.e. fall time
(hey, did you know that us bloggers love all things fall and pumpkin flavored?)
and I knew it needed to make an appearance in my kitchen.
Then at Homecoming a few weekends ago, my girl Maria showed up with it! 
Talk about perfection!
She made hers with apple pie spice and it was just as delicious.
You should probably try it both ways just to make sure ;)

Pumpkin Spice Puppy Chow
(originally pinned from Peanut Butter Fingers)

-2 1/2 cups powdered sugar
-1 bag white chocolate chips
-1/2 cup (or a little more) Biscoff spread*
-1 teaspoon pumpkin pie spice (I used 1 1/2 teaspoons)
-9 cups Chex cereal**

*I used Trader Joe's cookie butter instead of Biscoff spread.  
I am pretty sure they are just about the same thing.
If you don't have a Trader Joe's nearby, I'm sorry.
You haven't lived til you've had cookie butter.
In fact, maybe I should do a cookie butter giveaway, it's that good.
Thoughts?
**I used rice, corn and honey nut Chex cereal.
Mainly because I had a coupon and it was on sale (and cheaper) to buy 3 boxes and I wanted a little variety in our cereal cabinet.

That's enough rambling, on to the directions.

1. Place powdered sugar in a large sealable plastic bag. Set aside. Try not to spill it all over you kitchen like I did.
 2. Combine white baking chips and Biscoff spread/cookie butter in a microwavable safe bowl and microwave on high for 30 seconds at a time. Not for one minute, again, like I did. 
 #oops
3. Stir pumpkin pie spice into Biscoff/cookie butter mixture. Fold in Chex cereal and toss to coat.
 4.  Pour Chex into plastic bag and shake to coat the cereal in powdered sugar
 5.  Remove coated cereal from bag and serve. 
6. Devour

Let me know if this makes an appearance in your kitchen!
I'm thinking I will need to make a few more batches to have around at the holidays.

Yum! I love puppy chow, and have been looking for ways to use my Cookie Butter. Although eating straight out of the jar is always good also :)
