Okay, so I know that I said and that Mister said that this is the Best Chili Ever...and we still think that's true...BUT this new one is a close second.
Lime Chicken Chili
(adapted via)
1 medium onion, chopped
2 peppers. chopped (or half a bag of frozen, diced peppers)
3 garlic cloves, minced (or 1 tablespoon of crushed garlic)
2 tablespoons olive oil
3-4 chicken breasts, diced (or 1 lb ground turkey/chicken)
1 tablespoon flour
1 tablespoon baking cocoa
1 tablespoon cumin
1 tablespoon chili powder
1 teaspoon salt
1/2 teaspoon garlic salt
1/2 teaspoon pepper
2 cans diced tomatoes (chili ready/chipotle flavor optional)
2 cans black beans, drained
zest of 1 lime
juice of 2 limes
*not pictured flour, pepper or chicken. I hate seeing raw chicken so just know I used it but didn't want to photograph it.
1. In a dutch oven sauté the onion, pepper and garlic (Trader Joe's crushed garlic is a time saver!) in oil for 7-8 minutes, until soft.
2. Add diced chicken pieces and cook until no longer pink.
3. Stir in flour, cocoa, seasonings, lime zest and juice. Add tomatoes and beans and bring to a boil.
4. Reduce heat and let simmer for 25 minutes (or longer if you can) stirring often.
5. Top with any of the follow: cheese, tortilla chips, sour cream, avocado, cilantro
*total cheat Super Bowl version for me but so good with cheese and sour cream
This chili is SO yummy, fresh and filling!
The lime is such an interesting twist to the normal chili and adds the right amount of zing.
I think it could even use a bit more lime juice if you ask me!
This chili is so good it will carry you straight through those dreary winter months.
I can't wait to try this ! I made sure to pin the recipe. I love a good chili, especially if it is a little different. I actually started cooking a white chicken chili this morning to have it ready for a late lunch.

ReplyDeleteAdd me to the list of intrigued my the cocoa powder. I added ti to my chili once and whatever the combo was...it did not work. At all. But this looks tasty (which mine didn't even appear appetizing, ha)

ReplyDeleteWell, just looking at the ingredients, you have a winner! The cocoa is a secret ingredient in many competition-winning chili recipes. And the lime juice gives any dish a "fresh" taste. Can't wait to try!
ReplyDeleteOkay, now I'm saying this with all the love in the world, but is that a bowl for babies??? It looks so tiny! Who wants to have good portion control when it comes to chili? ;) Btw, it looks delish.
