Who doesn't love breakfast for dinner?
We sure do!
It had been far too long since we had had it and we remedied that last night.
I turned to a new cookbook that had recently graced my shelf, Supermarket Healthy.
I am one of those dorky people that will read a cookbook in bed and this one has been no exception. The subtitle really drew me in, right up my alley. Recipes that incorporate good, wholesome foods while saving money, done and done.
Melissa's cinnamon oatmeal pancakes immediately jumped out at me! The best part was, I had all of the ingredients on hand. Now, that is a recipe I can get on board with.
I've also dog eared quite a few other recipes I can't wait to incorporate into our meal plan.
I have my eye on: edamame hummus, butternut squash chili, caramelized brussels sprouts/pine nuts and (gluten free) penne, creamy brown rice "risotto"....to name a few!
To go along with the yummy pancakes, I made a strawberry/raspberry and honey syrup and bacon. Always bacon. We've recently experimented with cooking bacon on the oven. It is SO much easier, doesn't smoke up the house and tastes even better!
Only thing we were missing were the mimosas!

This meal LOOKS DELISH! I do protein waffles quite often and of course bacon. What do you use to cook bacon in the oven? I've seen the trays you can get at bed bath and beyond and target. Is the syrup recipe from the cookbook too? This makes me hungry just looking at it! :)

I love cookbooks, but I honestly use Pinterest for many of my recipes. BUT I still collect them and read them like book so I may have to check this one out. And I may have to try those pancakes. Did you use whole wheat flour or something GF?

Ooh, looks like a great book! Your sweet potato chili is so good, but a butternut squash version sounds intriguing... and it's been WAY too long since we've done brinner around here. I can definitely get on board with honey syrup, and I think Henkie Pie would enjoy these too!
