With the fun of summer, we have taken the easy route with dinners around here lately.
But earlier this week I whipped up a very tasty dinner. One that is definitely going to make the normal rotations.
Paleo Newbie is a really fantastic resource for Paleo recipes that fit our eating style.
I made a few adjustments to the recipe...I swapped out the chorizo for ground turkey, added beans and added a fresh tomato from our garden. I think next time I will add some corn as well.
Look at that enchilada sauce simmering away!
I had no idea making your own enchilada sauce was so easy but it really is. Those are the type of hacks that make my sugar allergy not quite so frustrating.
Another winner in our book lately is this Thai Basil Chicken dish, such a great use of our fresh basil.

I loveee enchiladas. You know who doesn't like any Mexican food? Mr. Tucker! How can you live in Tejas and not like MExican food?! Ugh!
Ooh, yes please! I just made something with enchilada sauce for the first time and bought a can of it. Good to know I can make it myself next time! Thanks for sharing :)

Ummm this looks delicious! I'm trying that Thai Basil Chicken this week! I made Tequila Lime Chicken tonight so I'm anxious to see how that turns out :)
